So I was having a rough day the other day and I remembered I had an artichoke in my fridge.  I cooked it up and ended up eating the whole thing in one sitting.  It was delicious and made me feel much  better.  Now, I know there are a few people who don’t like artichokes because they are a lot of work for only little bits of yummy artichokeness (I believe I made up this word).  While I agree that they take a lot of work, I think that if you sit down right after, of course while it’s hot, and just take in the experience, an artichoke is a little bit of paradise.  I started thinking about the different things in life that we miss because we don’t take the time to “eat it while it’s hot.”  Playing with our kids, watching a sunset, rocking the baby, dancing while you vacuum, singing in the shower, talking to our spouse or any of our family members while we’re both in the same room doing nothing…..  The list could go on forever!  So I’m challenging you to smell the roses, eat the artichoke, take a minute to enjoy something this week that you would normally just skip by.
